A few days before the arrival of Charles III to France, the kitchens of the Palace of Versailles are bustling with activity. Six months after the cancellation of their trip due to the mobilization against the pension reform, the British sovereign and Queen Camilla are preparing to begin their three-day official visit to France this Wednesday, September 20.
The royal couple are scheduled to travel to Bordeaux at the end of the week, but will first stop in Paris to meet Emmanuel and Brigitte Macron. Charles III and Camilla will be expected on Wednesday night for a dinner in the Hall of Mirrors of the Palace of Versailles.
Ticket validated by Buckingham and the Elysée
Responsible for creating the starter for this meal, Anne-Sophie Pic, the only three-star French chef at her Paris restaurant, spoke to the Spot on the menu for this evening event.
If the chef had initially planned an asparagus-based dish for the visit of Charles III in March, she had to revise her plans due to the season. As a result, the Valencian touch opted for a “cactus crab and blue lobster, veil of fresh almonds”, she specifies.
“It was I who proposed this recipe, validated after going back and forth between Buckingham and the Elysée,” explains Anne-Sophie Pic in Spot.
Poultry and dessert dish revisited
For the rest of the menu, chef Yannick Alléno was chosen to create the main course. As reported Paris PartyHe served Charles III poached Bresse birds, marinated in champagne with an extraction of toasted corn and gratin porcini.
As for dessert, it will be provided by Pierre Hermé. At the request of Brigitte Macron, the pastry chef and chocolatier will offer a revised version of one of his signature creations, the Ispahan, a rose-flavored macaron and cream, decorated with fresh raspberries and lychees.
