Danger of soybeans: What are the isoflavones and why collective catering poses a problem?

Soja -based foods contain too many isoflavones, plant substances with potentially harmful effects for health, alerts Anses, which recommends not using it in collective restoration.

Eating too much soy can damage your health. In a report published on Monday, March 24, the National Agency for Food, Environmental and Labor Safety (ANSES) alerts the danger of excessive consumption of soy products, such as desserts, including yogurts and creams, drinks, chopped meatballs and fillets or the famous Tofu.

In question? The isoflavonas content – plant substances similar to female hormones that are estrogen – of these foods. Too much isoflavonas consumption could represent, according to Anses, a health danger.

In BFMTV, Dr. Aymeric Dopter, head of the ANSES Risk Evaluation Unit linked to the nutrition, evokes cases of “early rules” observed in small girls who have fed with baby with soy -based products or “gynecomastia”, that is, that is, a breast development in humans.

Examples that remain “anecdotal”, according to the specialist “, observed in animals and can occur in humans.”

What are the isoflavones?

Isoflavones are naturally present in certain plants: soy and their derivatives, therefore, but also legumes (beans, beans, broken or chip sandwiches, lenses, lupines …). However, ANSS recalls that “the foods contained in most isoflavones are based on soybeans.”

Soy -based products do not contain the same isoflavone content. The most concentrated foods in isoflavones are soy -based appetizer cookies, but also smoked and natural tofu, soy -based pancakes or vegetable sausage with tofu.

“Therefore, there are 100 times more isoflavonas in appetizer cookies based on soybeans than in soy sauce,” says the signs.

What is the consumption limit?

But when does it become toxic? ANSES believes that the VTR (reference toxicological values), of which there may be a health risk is 0.02 mg per kg of body weight and per day for the general population and 0.01 mg/kg of body weight/day for pregnant women and children’s age, as well as prepubes.

Keep in mind that if it is difficult to convert into yogurt number or soy milk glass that would be recommended to consume per day, “everything depends on the soybean variety, its preparation,” recalls the aymoral dopter.

“There is a very high variability in isoflavones in soy -based foods,” he said.

From this conclusion, the agency estimates that 76% of boys aged 3 to 5 who consumed these foods exceed VTR, as well as 53% of girls from 11 to 17 years, 47% of men 18 years or older, as well as women aged 18 to 50.

Why collective catering is indicated

In your report, Anses recommends that collective restoration do not offer soy -based foods. “47% of soybeans are above VTR,” said Aymeric Dopter. Therefore, “as soon as a soy consumer occurs with his set (in the canteen or in the corporate restaurant), there is the risk of exceeding VTR, until reaching very important values” and, therefore, dangerous for health, argues the specialist.
