Ten people were hospitalized in Rennes after consuming tuna tataki in a restaurant in Bruz, Iille-Et-Vilaine. Seven of the victims left the hospital on Mondays and three on Tuesday, May 28, according to BFMTV, confirming information from Ousest-France.
Faced with an isolated case, emergency artists evoke food allergy. But given the occurrence of symptoms in several people in an almost so simultaneous way, he arrested caregivers who made the link with their consumption in the restaurant.
The symptoms intervene quickly after ingestion
Doctors evoke cases of scromotoxin. It is a food poisoning caused by the consumption of poorly preserved fish, in particular species rich in histidine such as tuna. Tuna Tataki is “one of the main causes of food poisoning linked to fish consumption,” specifies Brittany’s regional agency, according to Oueest France.
When these fish are poorly refrigerated, bacteria transform histidine (a natural amino acid) in histamine, a molecule involved in allergic reactions. This accumulation of histamine in fish of the fish can cause a pseudoallergic reaction in the consumer.
Symptoms occur in the minutes of ingestion. These can be puffs of heat, redness in the face, headache, diarrhea or vomiting.
